The Ingredients You’ll Need

This recipe is incredibly forgiving. You can toss in whatever vegetables are lingering in your fridge drawer. But for the classic, comforting base, here is what we recommend:

  • Smoked Sausage: One package of Unox Gelderse Rookworst, sliced into half-inch rounds.
  • Potatoes: About 3 to 4 medium gold potatoes. Cut them into small, even cubes so they cook quickly.
  • Onion: One large yellow onion, sliced.
  • Bell Pepper: One red or yellow bell pepper, chopped. This adds a lovely pop of color and a bit of natural sweetness to balance the smoke.
  • Garlic: Two cloves, minced. Because garlic makes everything better.
  • Olive Oil & Butter: A tablespoon of each. The oil keeps the butter from burning; the butter gives the potatoes that perfect diner-style crust.
  • Seasonings: Just a pinch of paprika, salt, and freshly cracked black pepper.

How to Make It (Step-by-Step)

Grab your heaviest skillet—cast iron is perfect if you have one—and let’s get cooking.

Step 1: Crisp the Sausage

Place your skillet over medium-high heat and add a splash of olive oil. Toss in your sliced smoked sausage. Let them sear for about 2 to 3 minutes on each side until they get those beautiful, deeply caramelized dark edges.

Once they are crisp, scoop them out of the pan and set them aside on a plate. Leave those glorious, smoky red oils behind in the skillet. That is liquid gold.

Step 2: Cook the Potatoes

Turn the heat down to medium. Add your butter to the pan with the remaining oils. Once it melts, toss in your cubed potatoes.

Spread them out in a single layer. Now, here is the secret to perfect skillet potatoes: leave them alone. Let them sit undisturbed for 4 to 5 minutes so they can form a gorgeous, golden-brown crust. Stir them gently, then let them crust up on the other side.

Step 3: Sweeten with Veggies

Once the potatoes are mostly tender and beautifully golden, slide them to one side of the skillet. Add your sliced onions and bell peppers to the empty side.

Cook them for about 5 minutes, stirring occasionally, until the onions are soft, sweet, and translucent. Toss in the minced garlic and a pinch of paprika, stirring for just a minute until your kitchen smells absolutely incredible.

Step 4: Bring It All Together

Dump your crispy smoked sausage back into the skillet. Stir everything together so the potatoes, veggies, and sausage are completely combined.

Let it all cook together for another 2 to 3 minutes so the flavors can get to know each other. Season with a pinch of salt and pepper to taste.
