Koopmans Wintercake met romige topping (490 gram)
A Winter Cake with the spicy flavours of Chai and a creamy Honey layer on top!
Ingredients for Baking: 1 pack Koopmans Winter Cake mix, 150 g butter or margarine (room temperature), 3 eggs (M, room temperature), 25 ml milk, 25 ml hot water
Preparation
1. Place the rack just below the middle of the oven and preheat the oven to 160 degrees Celsius.
2. Generously grease the cake tin with butter or margarine and dust the inside with flour, or use a baking spray.
Making the Cake Batter
3. Put the butter in a mixing bowl and beat it until soft and creamy.
4. Add the mix, milk, and eggs and stir the mixture with a mixer on the lowest setting until smooth.
5. Whip the batter with the mixer on the highest setting for 2 minutes.
6. Spread the cake batter into the cake tin.
Baking the Cake
7. Bake the Winter Cake for 55-60 minutes until cooked and golden brown.
8. Remove the cake from the tin and let it cool with the rounded side up on a rack.
Preparing Honey Topping
9. Fill a kettle and bring water to a boil.
10. Put the topping mix in a mixing bowl, add 25 ml of water (measuring on a kitchen scale is more precise), and stir the mixture with a mixer on the lowest setting until smooth.
11. Whip the mixture with the mixer on the highest setting for 2 minutes until fluffy.
12. Spread the topping mixture on the cooled cake and distribute it with the back of a spoon over the cake.
