This delightful cake is the perfect snack for anyone who loves delicious and responsible eating. Add pieces of raspberries and dark chocolate to the batter to create a tasty cake for the weekend, or enrich the batter with a handful of nuts for a healthy treat.
Ingredients for baking: 1 pack of Koopmans Banana Bread mix, 125 g of butter or margarine (room temperature), 4 eggs (size M, room temperature), 4 bananas, 115 g unsalted pecans, some flour for dusting
Preparation
- Place the rack in the middle of the oven and preheat the oven (electric 160°C, convection 140°C).
- Generously grease the cake tin with butter and dust the inside with flour.
- With a mixer using whisks, beat the butter until soft in a mixing bowl.
- Mash the bananas with a fork and add them to the butter along with the eggs and baking mix.
- Mix everything with the mixer at the lowest speed for a maximum of 1 minute until a batter forms. (There should still be visible pieces of banana).
- If desired, fold some chopped pecans into the batter.
- Pour the batter into the cake tin and, if you like, press some remaining pecans into the top of the banana bread batter.
- Bake the banana bread for 65-70 minutes until cooked through and browned.
- Place the banana bread in the cake tin on a rack and let it cool for 10 minutes in the tin.
- Remove the banana bread from the tin and let it cool further on a rack.
